If a Victoria sponge is the Queen of cakes then a New York cheesecake is the King of the cheesecakes!
I’ve mostly followed the recipe from The Hummingbird Bakery book but I prefer a biscuit base and can’t be bothered with the faff of cooking it in a bain-marie – mine always works perfectly without!
I made this for my Mum’s birthday as it’s her favourite and it went down a treat!
Creamy and rich and a buttery biscuit base. Mmmm.
