After two long months away from my family and boyfriend I took a break from Uni and came home. I had a cold brewing and was exhausted from a week of deadlines, but my mum knew just the dinner I needed. Beef casserole.
This beef casserole tastes oh so fancy with minimal effort. There’s no faffy frying off the beef, or posh stock, just chuck everything into a casserole dish and wait.
The dumplings as well are easy peasy dummy versions. We haven’t even bothered with unhealthy suet – this makes them pretty stodgy but sometimes you just need some dense carby deliciousness.
Serve up with some mash, baked potato or chunky bread and veggies.
