Banana Bread

One minute they are green, then momentarily a perfect yellow, before BAM, they are brown and bruised and nobody will eat them, except maybe Dad because he will eat anything. Bananas.

This is the perfect recipe for when bananas pass their heyday. Not only is this cake delicious, it saves bananas being thrown away and is practically one of your five-a-day…!


-175g self-raising flour
-1tsp bicarbonate soda
-1tsp mixed spice
-150g caster sugar
-60g soft margarine
-2 ripe bananas (or more)
-3tbs milk
-1 beaten egg


-Preheat oven to 180 degrees celcius and line or grease a 2lb loaf tin.
-Sift flour, bicarb and mixed spice into a bowl.
-Mix in all the other ingredients, spoon into a tin and bake for 40 minutes. If the top begins to brown too early cover with tin foil for the last 10 minutes.

Ridiculously easy! I now intentionally buy too many bananas just so I have an excuse to make this cake!
