Sushi is delicious and healthy and fun to make. Win win!
My boyfriend is a big fan of Japanese food and having picked up a new sushi rolling matt on his last visit to Tokyo we wanted to put it to use.
We improvised and didn’t use a recipe but this BBC Food recipe is super simple and very similar to how we made our tuna rolls. We used shredded courgette instead of cucumber which I think works equally well. And if you can’t find sashimi quality tuna, just sear both sides of the fish.
As a second variation we made teriyaki marinated chicken, which was also really tasty. Really really tasty. As in we’d planned to leave enough for lunch the next day but couldn’t help devouring the lot…
